1 Ripe banana
1/4 c plus 2 tbs Almond flour
1 tbs Almond butter (or any nut butter)
1/4 tsp Baking Powder
1/4 c Coconut Almond Koia
Dash of salt (optional)
Blueberries to top (optional)
In a bowl, mash the ripe banana with a fork until completely smooth. Add in the almond flour, almond butter, baking powder, Coconut Almond Koia, and dash of salt and stir until all ingredients are thoroughly combined. Transfer the batter into a microwaveable mug. Microwave for about 2 minutes and 30 seconds. The cake should rise but not overflow the mug. Let cool for a couple minutes, top with blueberries and enjoy!
