Meet the pancakes that make getting a little extra protein into your morning feel like a treat. Made with Koia Vanilla Protein Powder, these fluffy stacks have all the classic pancake goodness you love, with a protein boost built right in.

Top them with fresh berries, a drizzle of maple syrup, nut butter, or whatever your breakfast heart desires.

Makes approximately 12 pancakes

Ingredients
• 1½ cups all-purpose flour
1 serving Koia Vanilla Protein Powder
• 4 tsp baking powder
• ½ tsp salt
• 2 tbsp pure maple syrup
• 2 large eggs OR 2 flax eggs*
• 1 cup milk of choice
• ¼ cup water, plus more as needed
• ¼ cup melted butter OR melted coconut oil
• 1 tsp vanilla extract

For flax eggs: Combine 2 tbsp ground flaxseed with 5 tbsp water and let sit for 5 to 10 minutes.


How to Make Them

In a large bowl, whisk together the flour, Koia Vanilla Protein Powder, baking powder, and salt.

In a separate bowl, whisk together the maple syrup, eggs or flax eggs, milk, water, melted butter or coconut oil, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined. If the batter feels too thick, add a little more water until you reach your desired pancake consistency.

Heat a lightly greased skillet or griddle over medium heat. Scoop the batter onto the pan and cook until bubbles begin to form on the surface and the edges look set. Flip and cook until golden brown on both sides.

Stack them high, add your favorite toppings, and dig in.
