With these Double Chocolate Cacao Bean Cookies, you won’t have to feel guilty about giving into your temptations because they are gluten free, plant based, and only sweetened with Koia, plant based protein powder and optional maple syrup. So go ahead, indulge in the most soft, sweet, and feel good treat!

Ingredients
1 1/4 c Oat flour (oats grinder in a food processor or blender)
1/4 c Plant based chocolate or vanilla protein powder
1 1/2 tsp Baking soda
Dash of sea salt
3/4 c Almond butter
1 tsp Vanilla extract
1/4 c Plus 2 tbs Cacao Bean Koia
1-2 tbs Maple syrup (optional: depending on desired sweetness)
3 tbs Melted coconut oil
1/2 c Dark chocolate chips
Instructions:
Begin by preheating the oven to 350 F and line a large baking sheet with parchment paper. In a large bowl add all dry ingredients including oat flour, protein powder, baking soda and sea salt and stir until combined thoroughly. In a separate bowl add the almond butter, vanilla extract, Cacao Bean Koia, maple syrup, and melted coconut oil and stir until smooth and creamy.
Next, add the wet ingredients to the bowl of dry ingredients and using a mixer or spot, mix until a thick batter forms. After your batter is thoroughly combined, spoon in the chocolate chips evenly throughout. Use a spoon or ice scream scooper to form the dough into 12 balls and lay out evenly on your baking sheet. Place in the oven and bake for 10-12 minutes. Enjoy!
