Ingredients:
12 oz Vanilla Bean Koia
1 cup diced strawberries
1 cup non-dairy yogurt
1 tsp vanilla extract
1 tsp lemon juice
1⁄4 tsp salt
1 and 1⁄2 cups rolled oats
2 tbsp cacao nibs
1 tbsp chia seeds
Extra strawberries, for layering
Extra cacao nibs, for topping
Chocolate Magic Shell
1⁄2 cup chocolate chips
2 tsp coconut oil
Instructions
1. Blend Vanilla Bean Koia, diced strawberries, non-dairy yogurt, vanilla extract, lemon juice, and salt until smooth.
2. In a bowl, combine rolled oats, cacao nibs, chia seeds, and the blended mixture. Refrigerate overnight or for at least 4 hours.
3. Stir the overnight oats before spooning into glasses or jars. Optionally layer with diced strawberries.
4. Melt chocolate chips and coconut oil in the microwave, stirring until smooth. Drizzle over oats and sprinkle with cacao nibs.
5. Freeze glasses for 10 minutes to set the chocolate.
