Chocolate Cookie Dough Koia Ice Cream

We enhance this velvety ice cream with homemade cookie dough chunks made from almond flour, peanut butter, and a touch of maple syrup, all mixed with mini chocolate chips. Ingredients

Cookie Dough Chunks

● 3⁄4 cup almond flour
● 1⁄4 cup peanut butter (or cashew butter)
● 2 tbsp maple syrup
● 1 tsp vanilla extract
● 1⁄8 tsp salt
● 2 tbsp mini chocolate chips, divided

 

Chocolate Ice Cream

● 12 oz Cacao Bean Koia

 

Instructions

1. Pour Cacao Bean Koia into a 1-pint Ninja Creami container. Store in the freezer on a level surface for 24 hours.

2. In a bowl, add almond flour, peanut butter, maple syrup, vanilla extract, and salt. Mix together until evenly combined. Then, fold in 1 tbsp of the mini chocolate chips. Mix together. Using clean hands and a teaspoon, scoop and roll the cookie dough into balls. Store in a sealed container inside the freezer.

3. After 24 hours, remove the Ninja Creami pint from the freezer and let it thaw for 10 minutes.

4. Place the pint into the outer bowl of the Ninja Creami. Process on the “lite ice cream” setting. Once it is done spinning, remove the lid and stir the ice cream together. Reattach the top and spin again, using the “lite ice cream” setting once more.

5. Once it is done spinning, remove the lid. Dig a well down the center of the ice cream. Add 1⁄3 cup of the frozen cookie dough chunks and the remaining 1 tbsp mini chocolate chips. Reattach the lid and spin on the “mix-ins” setting.

6. Remove the pint from the machine. Enjoy ice cream straight from the pint, or serve in a bowl with toppings of your choosing. Enjoy!
